Dill Cucumber Sandwiches

With creamy dill-infused spread, crunchy cucumbers, and hearty whole grain or sourdough bread, they’re the perfect bite-sized snack. Easy to make and packed with flavor, just mix the cream cheese with dill, lemon juice, and spices, layer it on bread with fresh cucumbers, chill, then slice and serve. A delightful treat everyone will love!

Ingredients
  

8 ounces cream cheese, softened

2 tablespoons fresh dill, chopped (plus extra for garnish)

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large cucumber, thinly sliced

12 slices of whole grain or sourdough bread

Optional: Radish slices for garnish

Instructions
 

In a medium mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and thoroughly combined.

    Lay out the slices of bread on a clean surface. Spread a generous layer of the dill cream cheese mixture on one side of each slice.

      Place a layer of cucumber slices on top of the cream cheese spread on half of the slices. Make sure to cover the entire surface for maximum flavor.

        Top with another slice of bread, cream cheese side down, to create a sandwich.

          Gently press down on the sandwiches to help them hold together. For a cleaner look, you can trim the crusts of the sandwiches if desired.

            Place the sandwiches in the refrigerator for about 20 minutes to help them firm up.

              After chilling, cut each sandwich into quarters or halves, depending on your preference.

                Arrange the sandwiches on a platter and garnish with extra dill and optional radish slices.
