Ingredients
  

1 large cucumber, thinly sliced

2 medium apples (preferably Granny Smith or Fuji), cored and chopped

1/4 red onion, thinly sliced

1/4 cup walnuts, roughly chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

1/2 teaspoon lemon juice (optional, for added zest)

Instructions
 

In a large bowl, combine the sliced cucumber, chopped apples, and red onion.

    Add the chopped walnuts and crumbled feta cheese (if using) to the bowl.

      In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, salt, pepper, and lemon juice until well combined.

        Pour the dressing over the cucumber and apple mixture, and gently toss everything together until evenly coated.

          Add the fresh parsley and give the salad one last toss to incorporate.

            Let the salad sit for about 10 minutes before serving to allow the flavors to meld.
