Ingredients

1.5 pounds beef steak (such as sirloin or ribeye), cubed

4 medium russet potatoes, peeled and diced

1 cup baby carrots, halved

1 large onion, diced

3 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1/2 cup sour cream

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper, to taste

Green onions, chopped (for garnish)

Cooked bacon bits (optional, for garnish)

Instructions

Prep the Ingredients: Start by washing and peeling the potatoes, then dice them into bite-sized chunks. Halve the baby carrots, cube the steak, and dice the onion. Mince the garlic and set all ingredients aside.

Layer Ingredients in the Crockpot: In a large crockpot, add the diced potatoes, followed by the baby carrots and onion. Spread the cubed steak on top of the vegetables.

Mix the Sauce: In a mixing bowl, combine the beef broth, minced garlic, Worcestershire sauce, dried thyme, paprika, salt, and pepper. Stir until well mixed.

Pour Sauce Over Ingredients: Carefully pour the sauce mixture over the steak and vegetables in the crockpot, ensuring that everything is covered.

Cook on Low: Cover the crockpot with the lid and cook on low for 6-8 hours or until the beef is tender and the potatoes are cooked through.

Add Cheese and Sour Cream: About 30 minutes before serving, stir in the shredded cheddar cheese and sour cream. Allow it to melt and blend with the dish.

Garnish and Serve: Once cooked, give it a gentle stir. Serve hot, garnished with chopped green onions and, if desired, sprinkle with cooked bacon bits.
