Crispy Cheesy Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil or butter

Sour cream, salsa, or guacamole for serving (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, bell peppers, onion, garlic, cumin, paprika, salt, and pepper. Mix well until all ingredients are evenly coated with the cheese.

    Assemble the Quesadilla: Lay one tortilla flat on a clean surface. Spoon half of the chicken and cheese mixture onto one half of the tortilla. Fold the other half over the top to create a semi-circle. Repeat this step with the second tortilla and the remaining filling.

      Cook the Quesadilla: Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Once hot, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy.

        Flip and Finish: Carefully flip the quesadilla using a spatula. Add a bit more oil if necessary. Cook for another 3-4 minutes on the other side until it is crispy and the cheese has melted.

          Slice and Serve: Remove the quesadilla from the skillet and let it sit for about a minute before slicing it into wedges. Serve warm with sour cream, salsa, or guacamole on the side.
