Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb (450g) fresh salmon fillet, skinless and boneless, cut into bite-sized cubes

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs, beaten

1 cup panko breadcrumbs

Oil for frying (vegetable or canola)

For the Bang Bang Sauce:

¼ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Salt and pepper to taste

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes and set aside. Pat them dry with a paper towel to remove excess moisture.

    Set Up the Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, mix the flour, garlic powder, paprika, salt, and pepper. In the second bowl, place the beaten eggs. In the third bowl, add the panko breadcrumbs.

      Bread the Salmon: Take each salmon cube and dredge it first in the flour mixture, shaking off any excess, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs. Make sure to press gently to adhere the breadcrumbs well. Set aside on a plate.

        Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and season with salt and pepper to taste. Adjust the sweetness or spice level as desired.

          Heat the Oil: In a large frying pan, pour enough oil to cover the bottom and heat it over medium-high heat until it’s shimmering but not smoking.

            Fry the Salmon Bites: Carefully place the breaded salmon cubes in the hot oil in a single layer, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. You may need to do this in batches. Use a slotted spoon to transfer the fried salmon bites to a paper towel-lined plate to drain excess oil.

              Serve: Arrange the crispy salmon bites on a serving platter. Drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions or sesame seeds if desired.
