Ingredients

1 lb boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp cayenne pepper (adjust for spice level)

Salt and pepper, to taste

1 cup buttermilk

2 cups panko breadcrumbs

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp Sriracha (adjust for heat level)

1 tsp honey

Fresh cilantro, for garnish

Vegetable oil, for frying

Instructions

Marinate the Chicken: In a medium bowl, combine the chicken pieces with buttermilk. Cover and refrigerate for at least 30 minutes to tenderize the chicken and add flavor.

Prepare the Coating: In another bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Set aside.

Bread the Chicken: After marinating, remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, then dip back into the buttermilk, and finally coat with panko breadcrumbs. Ensure each piece is thoroughly coated for maximum crispiness.

Heat the Oil: In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You want enough oil to fully submerge chicken pieces for frying.

Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until smooth and well combined.

Serve: Place the crispy Bang Bang Chicken on a serving platter, drizzle with the Bang Bang sauce, and garnish with fresh cilantro. Serve hot with extra sauce on the side for dipping.
