1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

½ tsp cayenne pepper (optional for extra heat)

Vegetable oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust based on spice preference)

1 tbsp honey

1 tsp lime juice

Marinate Chicken: In a bowl, combine the chicken pieces and buttermilk. Allow to marinate for at least 1 hour in the refrigerator. This will help tenderize the chicken and enhance flavor.

    Prepare the Breading: In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using). In another shallow dish, place the panko breadcrumbs.

      Coat the Chicken: Remove the chicken from the buttermilk, shaking off any excess. Dredge each piece in the flour mixture, ensuring it is well-coated, then dip it back into the buttermilk and finally coat it with panko breadcrumbs, pressing gently to adhere.

        Heat Oil: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat until shimmering. You can test the oil's readiness by dropping a small piece of breading in; it should sizzle immediately.

          Fry Chicken: Carefully add the breaded chicken pieces to the hot oil in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy. Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
