Creamy Tuscan Chicken Pasta

12 oz fettuccine or penne pasta

2 large boneless, skinless chicken breasts

Salt and pepper, to taste

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/4 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium-high heat, heat the olive oil. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest before slicing into strips.

      Make the Sauce: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant. Add the cherry tomatoes and cook for about 2-3 minutes, or until they start to soften.

        Add Spinach: Stir in the fresh spinach and cook until wilted.

          Combine Cream and Cheese: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Allow the sauce to thicken slightly for about 3-5 minutes.

            Mix Pasta and Chicken: Add the cooked pasta and sliced chicken to the skillet, tossing everything together. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.
