2 cups rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, finely chopped (any color)

1/2 cup red onion, diced

1/2 cup black olives, sliced

1 cup cooked and crumbled bacon (optional)

1/2 cup grated Parmesan cheese

1 cup mayonnaise

1/4 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and black pepper to taste

Fresh parsley or basil for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool down.

    Prep the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and slice the black olives. If using bacon, cook it until crispy and crumble it.

      Make the Dressing: In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth and creamy.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the dressing. Then, add the prepared vegetables, black olives, crumbled bacon (if using), and grated Parmesan cheese. Toss everything gently until well combined.

          Chill: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld. You can chill it longer if you prefer.
