Creamy Garlic Shrimp Pasta

8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

2 tbsp olive oil

2 tbsp butter

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by cooking the linguine or fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.

    Sauté the Shrimp: In a large skillet over medium-high heat, add olive oil and butter. Once melted and hot, add the shrimp in a single layer. Season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant (be careful not to burn it). Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the skillet.

        Add Cream and Cheese: Stir in the heavy cream and bring the mixture back to a gentle simmer. Allow it to cook for about 2-3 minutes until it begins to thicken slightly. Add the grated Parmesan cheese and stir until melted and well combined.

          Combine Pasta and Shrimp: Add the cooked pasta and shrimp back into the skillet. Toss to coat everything in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to achieve the desired consistency.
