Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce

1 lb (450g) rotini pasta

2 boneless, skinless chicken breasts, sliced into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a kick

Cook the Pasta: In a large pot, boil salted water and cook the rotini pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced chicken, seasoning it with salt and pepper. Cook until golden brown and no longer pink, about 5-7 minutes. Remove chicken from skillet and set aside.

      Make the Garlic Butter: In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant, ensuring not to burn it.

        Create the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Italian seasoning, then cook for 2-3 minutes until the mixture thickens slightly.

          Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If desired, add red pepper flakes for a spicy kick.

            Combine: Return the cooked chicken to the skillet, followed by the drained rotini pasta. Toss everything together to ensure the pasta is well-coated in the creamy sauce. Cook for an additional 2-3 minutes until heated through.

              Garnish and Serve: Remove from heat and top with fresh chopped parsley. Serve immediately with extra Parmesan cheese on the side.
