Ingredients

4 cups ripe tomatoes, diced

1 cup cherry tomatoes, halved

1 medium onion, chopped

3 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

2 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the onion becomes translucent and the vegetables soften.

Add Tomatoes: Stir in the diced tomatoes and cherry tomatoes. Cook for another 5 minutes until the tomatoes start to break down and release their juices.

Flavor it Up: Pour in the vegetable broth and add dried basil, oregano, salt, and pepper. Bring to a gentle simmer.

Simmer: Let the soup simmer for about 15-20 minutes, allowing the flavors to meld. Stir occasionally.

Blend: Using an immersion blender, blend the soup until it reaches your desired level of creaminess, leaving some chunky pieces for texture. If a blender is not available, carefully transfer the soup in batches to a regular blender.

Add Cream: Once blended, stir in the heavy cream. Taste and adjust seasoning with additional salt and pepper if needed. Heat the soup gently for another 5 minutes.

Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Enjoy it with a slice of crusty bread or grilled cheese if desired!
