Ingredients

1 lb chicken sausage, sliced (mild or spicy, based on preference)

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup diced tomatoes (canned or fresh)

1 cup spinach (fresh or frozen)

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions

Sauté the Sausage: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set it aside.

Cook the Aromatics: In the same skillet, add the diced onion. Sauté for 3-4 minutes until translucent, then add the minced garlic and cook for another minute until fragrant.

Add Orzo & Liquids: Stir in the orzo pasta, followed by the chicken broth, diced tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil, then reduce the heat to low.

Simmer: Cover the skillet and let it simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

Mix in Cream & Spinach: Once the orzo is cooked, reduce the heat to low and stir in the heavy cream, cooked sausage, and spinach. Cook for another 2-3 minutes until the spinach wilts and everything is heated through.

Finish with Cheese: Stir in the grated Parmesan cheese, adjusting seasoning as necessary. If the mixture is too thick, add a splash of additional broth or cream to reach your desired consistency.

Serve & Garnish: Remove from heat, and garnish with fresh basil leaves if desired. Serve hot and enjoy!
