12 oz (340g) penne pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 small onion, finely chopped

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 cup (150g) baby spinach

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook for about 5-7 minutes or until browned and cooked through. Remove the chicken and set aside.

      Prepare the Sauce: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Make it Creamy: Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and stir until melted and smooth. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

          Combine Ingredients: Stir in the cooked chicken, baby spinach, and Italian seasoning. Cook until the spinach wilts, about 2-3 minutes. Adjust seasoning with salt and pepper as necessary.
