Creamy Chicken Lasagna with White Sauce

12 lasagna noodles

2 cups cooked, shredded chicken

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 cups baby spinach

1 medium onion, diced

3 cloves garlic, minced

4 tablespoons butter

4 tablespoons all-purpose flour

3 cups whole milk

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to the package instructions until al dente. Drain and set aside.

      Prepare the White Sauce: In a saucepan, melt the butter over medium heat. Add diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and cook for another 1 minute.

        Make the Roux: Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to form a roux. Gradually whisk in the milk, and bring to a simmer. Stir continuously until the sauce thickens (about 5-7 minutes). Add Italian seasoning, salt, and pepper to taste. Remove from heat.

          Combine the Filling: In a large bowl, mix together the shredded chicken, ricotta cheese, half of the mozzarella cheese, baby spinach, salt, and pepper.

            Layer the Lasagna: Spread a thin layer of white sauce on the bottom of a 9x13 inch baking dish. Place three lasagna noodles on top. Add half of the chicken-ricotta filling, followed by a layer of white sauce, and top with a sprinkle of Parmesan cheese. Repeat layers (noodles, chicken filling, white sauce, Parmesan) until you have used all the ingredients, finishing with noodles and white sauce on top.

              Add the Cheese Topping: Sprinkle the remaining mozzarella cheese evenly over the top layer, followed by any remaining Parmesan cheese.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                  Rest Before Serving: Allow the lasagna to rest for 10 minutes before serving. Garnish with fresh basil leaves for an added touch of flavor.
