Creamy Cauliflower Mash

1 medium head of cauliflower, cut into florets

3 tablespoons unsalted butter

1/4 cup heavy cream (or milk for a lighter version)

2 cloves garlic, minced

Salt and pepper to taste

1/4 teaspoon nutmeg (optional)

Fresh chives or parsley, finely chopped for garnish

Instructions
 

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10-12 minutes. Drain well.

    Sauté the Garlic: In a small skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it brown.

      Mash the Cauliflower: In a large mixing bowl or using a food processor, combine the drained cauliflower, sautéed garlic and butter, heavy cream, salt, pepper, and nutmeg (if using). Blend until smooth and creamy. If you prefer a chunkier mash, use a potato masher instead.
