Creamy Cajun Chicken Pasta

2 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

8 oz fettuccine or penne pasta

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Season Chicken: While the pasta is cooking, sprinkle the Cajun seasoning over the chicken breasts evenly, coating both sides.

      Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

        Sauté Vegetables: In the same skillet, add the minced garlic, diced onion, and bell pepper. Sauté for about 5 minutes until the vegetables are soft and fragrant.

          Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer. Add the halved cherry tomatoes and let the sauce simmer for 5-7 minutes until slightly thickened.

            Combine: Add the cooked pasta to the skillet, tossing it in the creamy sauce. If the sauce is too thick, use some of the reserved pasta water to achieve your desired consistency. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
