Cracker Barrel Sweet Potato

2 large sweet potatoes

1/4 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup mini marshmallows

1/2 cup chopped pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce them with a fork several times. Place on a baking tray and bake for about 45-60 minutes, or until they are tender and soft.

      Cool and Peel: Once done, allow the sweet potatoes to cool slightly before peeling off the skins. You can also use a knife to slice and scoop the flesh if preferred.

        Mash the Sweet Potatoes: In a large bowl, mash the sweet potatoes until smooth using a potato masher or fork.

          Mix Ingredients: Add the brown sugar, granulated sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt into the mashed sweet potatoes. Mix well until fully combined and creamy.

            Spread in Baking Dish: Transfer the sweet potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Add Marshmallows and Pecans: Sprinkle the mini marshmallows on top of the sweet potato mixture. If desired, also top with chopped pecans for added crunch.

                Bake Again: Place the baking dish in the preheated oven and bake for an additional 25 minutes, until the marshmallows are golden and puffed up.

                  Serve Warm: Remove from the oven, let cool slightly, and serve warm as a delightful side dish or dessert.
