Ingredients
  

4 cups fresh corn kernels (about 4-5 ears of corn)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup bell peppers (any color), diced

1/4 cup fresh cilantro, chopped

1 cup cooked bacon, crumbled (or use plant-based bacon for a vegetarian option)

1 cup shredded cheddar cheese

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped for a spicy kick

Instructions
 

Prepare the Corn: If using fresh corn, boil the ears for about 5-7 minutes before cutting off the kernels. Let them cool.

    Mix the Veggies: In a large mixing bowl, combine the cooled corn, cherry tomatoes, cucumber, red onion, bell peppers, and cilantro.

      Add Bacon and Cheese: Gently fold in the crumbled bacon and shredded cheddar cheese until evenly distributed.

        Create the Dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
