Ingredients

1.5 lbs boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons smoked paprika

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust to taste)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the softened butter, minced garlic, smoked paprika, brown sugar, Worcestershire sauce, Dijon mustard, salt, black pepper, and cayenne pepper. Mix well to create a flavorful compound butter. Reserve a third of the mixture for later.

Coat the Chicken: Add the chicken thighs to the remaining butter mixture, ensuring they are thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

Preheat the Grill: Heat your grill or grill pan over medium-high heat.

Cook the Chicken: Once hot, place the marinated chicken thighs on the grill. Cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Brush with the reserved compound butter during the last few minutes of grilling for extra flavor.

Rest and Serve: Remove the chicken from the grill and let it rest for about 5 minutes. Squeeze fresh lemon juice over the top and garnish with chopped parsley. Serve with lemon wedges on the side.
