Ingredients

2 cups fresh spinach, washed and dried

1 cup cottage cheese (preferably low-fat)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup cucumber, diced

1/4 cup crumbled feta cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon lemon juice

Salt and pepper to taste

A handful of walnuts, chopped (optional)

Fresh herbs (like dill or parsley) for garnish

Instructions

Prepare the Vegetables: In a large bowl, combine the fresh spinach, cherry tomatoes, red onion, and cucumber. Toss gently to mix everything evenly.

Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper until well combined.

Add Cottage Cheese: Gently fold the cottage cheese into the salad mixture, being careful not to break the cottage cheese too much. This will add creaminess and protein to the salad.

Finish It Off: Drizzle the dressing over the salad and toss to coat everything. Top with crumbled feta cheese and chopped walnuts if using, for added texture and flavor.

Serve: Garnish with fresh herbs of your choice before serving. This salad can be served immediately, or refrigerated for up to an hour to allow the flavors to meld.
