Ingredients

1 cup cottage cheese (preferably low-fat)

1 medium cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup sweet cherry tomatoes, halved

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Optional: A sprinkle of red pepper flakes for a kick

Instructions

Begin by preparing the vegetables: wash the cucumber and tomatoes thoroughly. Dice the cucumber into small cubes and halve the cherry tomatoes. Chop the red onion finely.

In a large mixing bowl, combine the cottage cheese and diced cucumber. Gently mix to combine.

Add the chopped red onion and cherry tomatoes to the bowl, combining them with the cottage cheese mixture.

Stir in the fresh dill, lemon juice, and olive oil, ensuring everything is evenly coated.

Season the salad with salt and pepper to taste. If you enjoy a bit of spice, add a pinch of red pepper flakes.

Cover the salad with plastic wrap and let it sit in the refrigerator for at least 15-30 minutes to allow the flavors to meld.

Serve chilled, garnished with additional dill and a slice of cucumber if desired.
