Ingredients

1 pound boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

½ teaspoon paprika

Salt and pepper to taste

1 cup shredded cabbage (green or a mix including purple)

½ cup shredded carrots

¼ cup chopped green onions

1 cup shredded Monterey Jack cheese

24 wonton wrappers

2 cups oil (for frying)

½ cup sweet chili sauce

Fresh cilantro leaves (for garnish)

Instructions

Cook the Chicken: In a medium pot, add the chicken breast and cover it with water. Bring to a boil, then reduce to a simmer. Cook for about 15-20 minutes, or until the chicken is cooked through. Remove from water and let it cool, then shred it using two forks.

Season the Chicken: In a mixing bowl, combine the shredded chicken, garlic powder, onion powder, chili powder, paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated in the spices.

Prepare the Wonton Wrappers: Heat the oil in a deep pot or fryer to 350°F (175°C). While the oil is heating, take the wonton wrappers and place a small spoonful of the seasoned chicken in the center of each wrapper. Next, fold the sides over the filling to create a pocket and seal the edges tightly. For extra assurance, you can use a bit of water on your fingers to help seal them.

Fry the Tacos: Once the oil is hot, fry the wonton tacos in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes on each side until they are golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

Prep the Slaw: In a bowl, combine the shredded cabbage, carrots, and green onions. You can drizzle a little sweet chili sauce over the mixture for added flavor.

Assemble the Tacos: Once the wonton shells have cooled slightly, fill each taco with a generous amount of the cabbage-carrot slaw. Top with shredded cheese and drizzle with additional sweet chili sauce.

Garnish and Serve: Top each taco with fresh cilantro leaves and serve immediately. Add extra chili sauce on the side for dipping if desired!
