Ingredients

2 cups of brewed espresso, cooled

1 cup of heavy cream

1 cup of mascarpone cheese

½ cup of granulated sugar

1 teaspoon of vanilla extract

20-24 ladyfinger cookies

Unsweetened cocoa powder (for dusting)

Dark chocolate shavings (optional, for garnish)

Instructions

Begin by brewing strong espresso and allow it to cool completely. You can place it in the fridge to speed up the cooling process.

In a large mixing bowl, combine the mascarpone cheese, granulated sugar, and vanilla extract. Whisk together until smooth and creamy.

In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture, making sure not to deflate the cream. This will create a light and airy texture.

Once the espresso has cooled, dip each ladyfinger quickly into the espresso, ensuring they soak for just a second on each side. Avoid soaking them too long, as they can become too soggy.

In a rectangular or square dish, arrange a layer of the dipped ladyfingers at the bottom.

Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.

Repeat the layering process with another layer of dipped ladyfingers followed by the remaining mascarpone mixture on top.

Once assembled, cover the dish with plastic wrap and allow it to chill in the refrigerator for at least 4 hours, or overnight for best results.

Just before serving, dust the top generously with unsweetened cocoa powder and sprinkle with dark chocolate shavings if desired.

Cut into squares, serve chilled, and enjoy your delightful classic tiramisu!
