6 cups Brioche or Challah bread, cubed

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/4 cup granulated sugar

2 tablespoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

Pinch of salt

1/2 cup unsalted butter, melted

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Maple syrup, for serving

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

      Gently fold in the cubed bread, ensuring each piece is coated in the egg mixture. Allow the bread to soak for about 10-15 minutes, stirring occasionally to ensure even absorption.

        Once the bread has soaked, scoop the mixture into the prepared muffin tin, filling each cup evenly. Do not overfill; it’s best to leave a little space at the top.

          Drizzle the melted butter evenly over the tops of the muffins.

            In a small bowl, combine the remaining 1/2 cup of granulated sugar with the tablespoon of ground cinnamon. Sprinkle this cinnamon sugar mixture generously over the muffin tops.

              Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and puffed up. A toothpick should come out clean when inserted into the center.

                Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack.
