1 cup steel cut oats

4 cups water or milk (or a mix of both)

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 tablespoons maple syrup (more for serving, if desired)

2 ripe bananas, sliced

2 tablespoons butter or coconut oil

1 cup pomegranate seeds

1/2 teaspoon vanilla extract

Chopped nuts (such as walnuts or almonds) for topping (optional)

Cook the Oats: In a medium saucepan, combine steel cut oats, water (or milk), and salt. Bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer uncovered for about 20-25 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid.
