3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 tablespoon ground cinnamon

½ teaspoon nutmeg (optional)

½ teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 tablespoon vanilla extract

½ cup granulated sugar (for sprinkling)

Optional: royal icing or glaze for decoration

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Incorporate the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until fully combined.

          Combine the Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour or until firm. This will make it easier to roll out.

              Roll Out the Dough: Lightly flour your work surface and rolling pin. Divide the dough into halves or quarters for easier handling. Roll out one portion of dough to about ¼ inch thick.
