3 large eggs

1 cup granulated sugar

1/4 cup unsalted butter, softened

1/2 cup brown sugar, packed

2 tablespoons ground cinnamon

1/2 cup chopped nuts (optional, such as walnuts or pecans)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Preheat your oven to 375°F (190°C). Line a 15x10-inch jelly roll pan with parchment paper, leaving an overhang on the sides for easy removal of the cake.

    Make the cake batter: In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy, about 5 minutes. Stir in the vanilla extract.

      Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry mixture to the egg mixture, gently folding until just combined.

        Bake the cake: Pour the batter into the prepared pan, spreading evenly. Bake for 12-15 minutes or until lightly golden and a toothpick inserted in the center comes out clean.

            Roll the cake: Once the cake is out of the oven, immediately invert it onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper.
