Chinese Beef and Broccoli

1 lb (450g) flank steak, sliced thin against the grain

2 cups broccoli florets

1/2 cup bell pepper, sliced (any color)

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil (for cooking)

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper, to taste

Cooked rice or noodles, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with soy sauce, cornstarch, and a pinch of salt. Mix well and let marinate for at least 20 minutes.

    Prepare the Sauce: In a small bowl, whisk together the oyster sauce, sesame oil, rice vinegar, and sugar. Set aside.

      Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and rinse under cold water to stop the cooking process.

        Heat the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat.

          Stir-Fry the Beef: Add the marinated beef to the hot wok in a single layer. Stir-fry for about 2-3 minutes or until browned and cooked to your liking. Remove the beef from the wok and set aside.

            Sauté Vegetables: In the same wok, add the minced garlic, grated ginger, and sliced bell pepper. Stir-fry for about 1 minute until fragrant.

              Combine: Return the beef to the wok along with the blanched broccoli. Add the prepared sauce and stir well to combine everything. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.

                Serve: Serve the beef and broccoli stir-fry hot over cooked rice or noodles. Garnish with sesame seeds and sliced green onions.
