Ingredients
  

1 pound ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

3 cups elbow macaroni

4 cups beef or vegetable broth

1 cup shredded cheddar cheese

1/2 cup diced green onions (for garnish)

Sour cream (optional, for serving)

Instructions
 

In a large pot or dutch oven over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes, until the onion is soft and translucent.

      Stir in the kidney beans, black beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.

        Pour in the beef or vegetable broth and bring the mixture to a boil.

          Once boiling, add the elbow macaroni. Reduce heat to a simmer, cover, and let it cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally.

            Once the pasta is cooked, stir in half of the shredded cheddar cheese until melted and well incorporated.

              Serve hot, garnished with the remaining cheddar cheese, diced green onions, and a dollop of sour cream if desired.
