Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper (optional, for heat)

1 lemon, zested and juiced

1 cup chicken broth

1 cup green olives, pitted and halved

2 tablespoons honey

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

1/4 cup almonds, slivered (for garnish)

Cooked couscous or crusty bread (for serving)

Instructions

Prepare the Chicken: Season the chicken thighs thoroughly with salt, black pepper, and the spices (ginger, cumin, turmeric, cinnamon, and cayenne pepper) on all sides. Let marinate for 30 minutes for best flavor.

Sauté Onions and Garlic: Heat olive oil in a large tagine or heavy-bottomed pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add minced garlic and continue cooking for another minute until fragrant.

Brown the Chicken: Increase heat to medium-high, add the seasoned chicken thighs to the pot, skin side down. Brown each side for about 5 minutes until golden brown. You may need to do this in batches to avoid crowding the pot.

Add Lemons and Broth: Once the chicken is browned, add the lemon zest, lemon juice, chicken broth, honey, and olives to the pot. Bring to a simmer.

Slow Cook: Reduce the heat to low, cover with the tagine lid or a tight-fitting lid, and let cook gently for about 45 minutes, or until the chicken is tender and fully cooked.

Final Adjustments: Taste the sauce and adjust seasoning if necessary. If the sauce is too tangy, add a bit more honey for sweetness.

Serve: Remove the pot from heat. Garnish with chopped cilantro and toasted slivered almonds for an added crunch. Serve the chicken tagine hot with couscous or crusty bread to soak up the delicious sauce.
