Chicken Shawarma Recipe; with best marinade EVER

Ingredients
  

For the Marinade:

1 ½ lbs boneless, skinless chicken thighs or breasts

3 tablespoons olive oil

Juice of 1 large lemon

4 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground turmeric

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

½ teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper, to taste

½ cup plain yogurt

1 tablespoon Dijon mustard

For Serving:

Pita bread or flatbreads

Fresh vegetables: tomatoes, cucumbers, onions

Pickles (optional)

Fresh parsley, chopped

Tahini sauce or garlic sauce

Instructions
 

Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, cumin, coriander, turmeric, smoked paprika, cinnamon, cayenne, salt, black pepper, yogurt, and Dijon mustard until well combined.

    Marinate the Chicken: Place the chicken thighs or breasts into the marinade and toss to coat thoroughly. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight for the best flavor.

      Cook the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 5-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

        Rest and Slice: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then, slice it thinly against the grain.

          Assemble the Shawarmas: Warm your pita bread or flatbreads on the grill for a minute. Layer the sliced chicken with fresh veggies, pickles if using, a sprinkle of chopped parsley, and drizzle generously with tahini or garlic sauce.
