Ingredients
  

2 cups rotini pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, chopped

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1 cup fresh basil leaves

1/2 cup homemade or store-bought pesto sauce

1/4 cup olive oil

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Optional: 1/4 cup pine nuts, toasted for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl.

      Mix Chicken and Pasta: Once the pasta is cool, add it to the mixing bowl with the vegetables, along with the diced cooked chicken.

        Add Pesto: In a smaller bowl, combine the pesto with olive oil, stirring well to create a smooth dressing. Pour this dressing over the pasta, chicken, and vegetables.

          Toss and Season: Gently toss all the ingredients until well combined. Sprinkle with salt and pepper to taste. If using, add the grated Parmesan cheese and toss again.

            Garnish and Chill: If desired, top the salad with toasted pine nuts for added crunch. Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld.
