Chicken Parmesan Thighs

4 boneless, skinless chicken thighs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

2 tablespoons fresh basil, chopped (for garnish)

1/4 cup all-purpose flour

2 large eggs, beaten

1/4 cup olive oil

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Breading Station: Set up three shallow bowls. In the first bowl, place the flour; in the second, combine the beaten eggs; and in the third, mix the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and pepper.

      Bread the Chicken: Pat the chicken thighs dry with paper towels. Dredge each thigh in the flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken thoroughly in the breadcrumb mixture, pressing gently to adhere.

        Heat the Oil: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, carefully add the breaded chicken thighs. Sear for about 4 minutes on each side until golden brown and crispy.

          Add Sauce and Cheese: Once seared, remove the skillet from the heat. Pour marinara sauce evenly over the chicken thighs. Sprinkle shredded mozzarella cheese generously on top.

            Bake: Transfer the skillet to the preheated oven and bake for about 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven, garnish with fresh basil, and serve hot with pasta, a side salad, or crusty bread.
