Chicken Kofta Recipe

Ingredients
  

1 lb ground chicken

1 small onion, grated

2 garlic cloves, minced

1-inch piece of fresh ginger, grated

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust for spice level)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

1 tablespoon olive oil (for grilling)

Skewers (soaked in water if using wooden skewers)

Instructions
 

In a large mixing bowl, combine the ground chicken, grated onion, minced garlic, grated ginger, parsley, cilantro, cumin, coriander, paprika, cayenne pepper, salt, black pepper, and lemon juice. Mix well until all ingredients are evenly incorporated.

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes. This helps the flavors meld together and makes it easier to shape the koftas.

      Preheat your grill or grill pan over medium-high heat. Lightly grease the grill with olive oil to prevent sticking.

        While the grill is heating, take the chicken mixture out of the refrigerator. Wet your hands with water to prevent sticking and shape the mixture into elongated kofta shapes, about 2 inches long, and thread them onto the soaked skewers.

          Once the grill is hot, place the skewered koftas on the grill. Cook for about 5-7 minutes on each side or until they are cooked through and have nice grill marks. The internal temperature should reach 165°F (75°C).

            Remove the koftas from the grill and let them rest for a few minutes before serving.

              Serve warm with a side of pita bread, tahini sauce, or a yogurt dip, garnished with extra herbs if desired.
