Chicken Fiesta Casserole

Ingredients
  

2 cups cooked shredded chicken

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1 cup diced bell peppers (any color)

1 small onion, diced

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1/2 cup taco sauce

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Sauté for about 5 minutes or until the vegetables have softened.

      Stir in the minced garlic, ground cumin, and chili powder, cooking for another minute until fragrant.

        In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, and taco sauce. Mix well.

          Add the sautéed vegetables to the mixture and season with salt and pepper to taste. Stir until everything is evenly combined.

            Transfer the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

              Sprinkle the shredded cheddar cheese on top of the mixture, covering it evenly.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Remove from the oven and let it cool for about 5 minutes before serving. Garnish with fresh cilantro if desired.
