Chicken Fajita Salad

Perfect for a quick lunch or dinner, this colorful dish features marinated grilled chicken, sautéed peppers and onions, and a mix of greens topped with creamy avocado and shredded cheddar. Ingredients
  

2 boneless, skinless chicken breasts

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

6 cups mixed salad greens (romaine, spinach, arugula)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional: Salsa and sour cream for serving

Marinate the Chicken: In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts, coating them well in the marinade. Let them sit for at least 30 minutes (or overnight in the fridge for more flavor).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and the juices run clear. Remove from heat and let it rest for 5 minutes before slicing into strips.

      Sauté the Vegetables: In a skillet over medium heat, add a splash of olive oil. Add the sliced bell peppers and onion. Sauté until the vegetables are soft and slightly charred, about 5-7 minutes. Season with a pinch of salt and pepper.

        Assemble the Salad: In a large bowl, combine the mixed greens, cherry tomatoes, avocado slices, grilled chicken strips, and sautéed peppers and onions. Toss gently to mix.

          Dress and Garnish: Drizzle lime juice over the salad, sprinkle with shredded cheddar cheese and chopped cilantro. Toss lightly to combine everything.

            Serve: Divide the salad among plates and serve with salsa or sour cream on the side if desired.
