Chicken Fajita Casserole

1 lb chicken breast, diced

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

2 cups cooked rice (white or brown)

1 cup corn (frozen or canned, drained)

2 cups shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish

Sour cream for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes.

      Stir in the sliced onion, red and green bell peppers, and minced garlic into the skillet. Sauté until the vegetables are tender, about 4-5 minutes.

        Sprinkle the chili powder, cumin, smoked paprika, salt, and black pepper over the chicken and vegetables. Stir well to combine and cook for another 2 minutes to incorporate the spices.

          In a large mixing bowl, combine the cooked rice, black beans, diced tomatoes with green chilies, and corn. Add the chicken and vegetable mixture and stir until everything is well mixed.

            Spread half of the mixture evenly into a greased 9x13 inch baking dish. Sprinkle half of the shredded cheese over this layer.

              Layer the remaining chicken mixture on top, followed by the rest of the cheese.

                Cover the baking dish with foil and bake for 20 minutes.

                  Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                    Let it cool for a few minutes before serving. Garnish with fresh cilantro and serve with sour cream on the side if desired.
