Chicken Broccoli Potato Casserole

2 cups cooked chicken, diced

2 cups fresh broccoli florets

4 medium-sized potatoes, peeled and diced

1 cup shredded cheddar cheese

1 cup sour cream

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil

Instructions
 

Prepare Potatoes: Preheat the oven to 375°F (190°C). Boil the diced potatoes in salted water for about 8-10 minutes or until just tender. Drain and set aside.

    Cook Broccoli: In the same pot, add the broccoli florets and blanch them in boiling water for 2-3 minutes until bright green. Drain and set aside.

      Mix the Base: In a large mixing bowl, combine the cooked chicken, blanched broccoli, boiled potatoes, sour cream, chicken broth, garlic powder, onion powder, thyme, and half of the cheddar cheese. Season with salt and pepper to taste. Mix until well combined.

        Transfer to Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil. Pour the chicken and vegetable mixture into the dish and spread evenly.

          Add Cheese and Topping: Sprinkle the remaining cheddar cheese on top of the casserole. If using, sprinkle breadcrumbs over the cheese for a crunchy topping.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the top is golden brown.
