Ingredients
  

2 cups cooked, shredded chicken breast

1 ripe avocado, mashed

1/4 cup Greek yogurt (or mayonnaise, for creaminess)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 slices of sourdough or whole grain bread

1 cup shredded cheddar cheese

1/2 cup fresh cilantro, chopped (optional)

Olive oil or butter for grilling

Cherry tomatoes, halved (for garnish)

Prepare the Avocado Mixture: In a medium bowl, mash the ripe avocado with a fork. Add Greek yogurt (or mayonnaise), lime juice, garlic powder, cumin, and season with salt and pepper. Mix well until creamy and combined.

    Combine Chicken: Add the shredded chicken into the avocado mixture. Fold it gently until all the chicken is coated with the creamy avocado mix. If using, stir in the chopped cilantro for added flavor.

      Assemble the Sandwich: Lay out the four slices of bread. Spread a generous portion of the chicken avocado mixture on two of the slices. Top each with shredded cheddar cheese, then place the remaining slices of bread on top to create a sandwich.
