Chicken Avocado Melt Sandwich

2 cups cooked chicken breast, shredded

1 ripe avocado, mashed

1 cup shredded cheddar cheese

1/4 cup plain Greek yogurt or mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper, to taste

4 slices of whole-grain or sourdough bread

1 tablespoon olive oil or butter

Fresh cilantro or parsley, for garnish (optional)

Sliced tomatoes (optional)

Thinly sliced red onion (optional)

Instructions
 

In a medium bowl, combine the shredded chicken, mashed avocado, Greek yogurt (or mayonnaise), lime juice, garlic powder, salt, and pepper. Mix until thoroughly blended and creamy.

    Heat a skillet over medium heat and add the olive oil or butter, allowing it to melt and coat the pan lightly.

      Place two slices of bread in the skillet and spoon half of the chicken avocado mixture evenly over each slice.

        Sprinkle half of the shredded cheddar cheese over the chicken avocado mixture on each slice.

          Top each with another slice of bread and cook for about 3-4 minutes until the bottom is golden brown and crispy.

            Carefully flip the sandwiches and cook for another 3-4 minutes on the other side, until the cheese is melted and the bread is golden brown.

              Remove from the skillet and allow to cool slightly before slicing in half.

                For added flavor, garnish with fresh cilantro or parsley and layer with slices of tomatoes and red onions if desired.
