Ingredients

1 can (400g) mixed beans (or kidney beans, black beans, and chickpeas)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon garam masala

½ teaspoon red chili powder (adjust to taste)

Salt to taste

Black pepper to taste

½ cup grated cheese (cheddar or mozzarella)

1 tablespoon chopped fresh cilantro (for garnish)

4 slices of bread (your choice: sourdough, whole grain, or white)

Optional: a splash of lemon juice for extra zing

Instructions

Prepare the Beans: Drain and rinse the canned mixed beans under cold water. Set aside.

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

Add Spices: Sprinkle in the cumin powder, coriander powder, garam masala, and red chili powder. Cook for 1-2 minutes, stirring constantly to toast the spices.

Combine Beans: Add the drained beans to the skillet. Season with salt and black pepper, and stir to combine. Cook for about 5-7 minutes until the beans are heated through and well-coated with the spices. If desired, add a splash of lemon juice for added tang.

Melt the Cheese: Reduce the heat to low, sprinkle the grated cheese over the beans, and cover the skillet. Allow the cheese to melt for about 3-5 minutes.

Toast the Bread: While the cheese is melting, toast the slices of bread to your desired level of crispiness.

Assemble the Dish: Once the cheese has melted, serve a generous portion of the cheesy masala beans on each slice of toast. Garnish with fresh cilantro.

Enjoy: Serve immediately while hot, and relish the comforting flavors of this cheesy masala delight!
