2 cups cooked chicken, shredded

1 cup hot dogs, sliced into bite-sized pieces

1 cup long-grain rice

3 cups chicken broth

1 can (10.5 oz) cream of chicken soup

2 cups shredded cheddar cheese

1 cup frozen mixed vegetables (peas, corn, carrots)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon paprika

Salt to taste

1 tablespoon olive oil

¼ cup green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the long-grain rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes or until the rice is tender. Remove from heat and set aside.

      Sauté the Hot Dogs: In a large skillet, heat the olive oil over medium heat. Add the sliced hot dogs and sauté for about 5-7 minutes until they are slightly browned. Remove from heat and set aside.

        Prepare the Casserole Mixture: In a large mixing bowl, combine the shredded chicken, sautéed hot dogs, cooked rice, cream of chicken soup, shredded cheddar cheese (reserve some for topping), frozen mixed vegetables, garlic powder, onion powder, black pepper, paprika, and salt. Stir until all ingredients are well mixed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish. Spread it out evenly.

            Add Cheese Topping: Sprinkle the remaining cheddar cheese over the top of the casserole.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with chopped green onions before serving.
