1 package (12 oz) cheese-filled tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 tsp ground cumin

1 tsp chili powder

2 cups shredded cheddar cheese

1 cup sour cream

¼ cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

Instructions
 

Cook the tortellini: In a large pot, bring salted water to a boil. Add the cheese-filled tortellini and cook according to the package instructions until al dente. Drain and set aside.

    Brown the beef: In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat.

      Sauté onions and garlic: Add the diced onion to the skillet, cooking until softened (about 2-3 minutes). Stir in the minced garlic and cook for another minute until fragrant.

        Combine ingredients: Add the enchilada sauce, black beans, corn, cumin, chili powder, and season with salt and pepper to taste. Mix well and let it simmer for 5-7 minutes, allowing the flavors to meld.

          Mix in tortellini: Gently fold the cooked tortellini into the beef mixture, ensuring they are well coated with the enchilada sauce.

            Add cheese: Sprinkle 1 cup of shredded cheddar cheese over the tortellini mixture. Stir until the cheese is melted and everything is evenly combined.

              Layer in a baking dish: Preheat the oven to 350°F (175°C). Transfer the tortellini and beef mixture to a greased 9x13 inch baking dish. Spread it out evenly.

                Top with remaining cheese: sprinkle the remaining cup of cheddar cheese on top of the tortellini mix.

                  Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

                    Serve and garnish: Once baked, remove from the oven and let it cool slightly. Serve hot with a dollop of sour cream and a sprinkle of chopped fresh cilantro.
