Cheese Fatayer

For the Dough:

4 cups all-purpose flour

1 tsp salt

1 tsp sugar

1 packet (2 1/4 tsp) active dry yeast

1 1/2 cups warm water (110°F/43°C)

1/4 cup olive oil

For the Filling:

2 cups mixed cheese (such as mozzarella, feta, and ricotta)

1/2 cup fresh parsley, finely chopped

1/4 cup green onions, finely chopped

1 tsp garlic powder

1/2 tsp black pepper

Salt, to taste

1 egg (for egg wash)

Instructions
 

Prepare the Dough:

    - In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes, or until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.

        - Mix until a dough forms, then knead it on a floured surface for about 8-10 minutes, until smooth and elastic.

          - Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

            Prepare the Filling:

              - In a mixing bowl, combine the mixed cheese, parsley, green onions, garlic powder, black pepper, and salt. Stir well until the ingredients are fully incorporated.

                Shape the Fatayer:

                  - Once the dough has risen, punch it down and divide it into small balls (about the size of a golf ball).

                    - Roll each ball into a circle on a floured surface, about 5-6 inches in diameter.

                      - Place a generous tablespoon of the cheese filling in the center of each circle.

                        - Fold the dough over the filling to create a half-moon shape, then pinch the edges to seal tightly. For a decorative touch, pleat the edges if desired.

                          Bake the Fatayer:

                            - Preheat your oven to 375°F (190°C).

                              - Arrange the fatayer on a baking sheet lined with parchment paper.

                                - In a small bowl, beat the egg and brush it over the tops of the fatayer for a golden finish.

                                  - Bake for 20-25 minutes, or until the fatayer are golden brown and cooked through.

                                    Serve:

                                      - Allow the fatayer to cool slightly before serving. Enjoy them warm, or store them in an airtight container for later.
