Ingredients

1 pound ground beef

1 cup uncooked white rice

2 cups beef broth

1 medium onion, chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup frozen mixed vegetables (carrots, peas, corn)

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

1 ½ cups shredded sharp cheddar cheese

1 cup breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until it's browned, breaking it apart with a spatula (about 5-7 minutes). Drain any excess fat.

Add Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

Combine Ingredients: Stir in the uncooked rice, beef broth, cream of mushroom soup, frozen mixed vegetables, Worcestershire sauce, thyme, salt, and pepper. Mix well to combine.

Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

Add Cheese Layer: Sprinkle the shredded cheddar cheese generously over the top of the casserole.

Breadcrumb Topping: In a small bowl, mix the breadcrumbs with olive oil until they are lightly coated. Then, sprinkle the breadcrumb mixture over the cheese layer.

Bake Casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Once finished, take the casserole out of the oven and let it sit for about 5 minutes. Garnish with fresh parsley before serving.
