2 large carrots, grated

1 large green apple, cored and diced

1/2 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

3 tablespoons Greek yogurt

1 tablespoon honey

1 tablespoon lemon juice

1 teaspoon cinnamon

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple. Toss them together to mix well.

    Add the raisins (or dried cranberries) and chopped walnuts (or pecans) to the bowl and stir gently to incorporate.

      In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, and cinnamon until smooth and creamy.

        Pour the dressing over the carrot and apple mixture. Gently fold the dressing into the salad until everything is well coated.

          Season with salt and pepper to taste, and mix again.
