2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup buttermilk

1/4 cup fresh herbs (such as chives, parsley, and thyme), finely chopped

1 tablespoon honey (optional, for a hint of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and black pepper. Whisk together until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        Stir in the finely chopped fresh herbs until evenly distributed.

          Pour in the buttermilk and honey (if using) and gently mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Turn the dough out onto a lightly floured surface and gently pat it into a rectangle about 1 inch thick.

              Fold the dough over itself three times, then gently roll it out again to a 1-inch thickness.

                Use a round biscuit cutter to cut out biscuits and place them onto the prepared baking sheet, leaving some space between each one.

                  Gather any scraps, gently knead, and cut additional biscuits until all the dough is used.

                    Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
