1 ½ cups all-purpose flour

1 cup fresh blueberries

½ cup granulated sugar

½ teaspoon baking soda

2 teaspoons baking powder

½ teaspoon salt

1 large egg

½ cup buttermilk

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

1 tablespoon lemon zest

Optional: coarse sugar for sprinkling

Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the egg, buttermilk, melted butter, vanilla extract, and lemon zest until fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; it's okay if there are a few lumps.

          Add Blueberries: Gently fold in the fresh blueberries, making sure to distribute them evenly throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If desired, sprinkle a pinch of coarse sugar on top of each muffin for added crunch.
