1 cup fresh or frozen raspberries

2 tablespoons chia seeds

1 cup almond milk (or any plant-based milk)

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Fresh raspberries and mint leaves for garnish (optional)

Instructions
 

In a blender, combine the raspberries, almond milk, maple syrup, vanilla extract, and sea salt. Blend until smooth and well combined.

    Pour the raspberry mixture into a bowl and stir in the chia seeds.

      Mix well, ensuring that the chia seeds are evenly distributed throughout the mixture.

        Cover the bowl and refrigerate for at least 2 hours or overnight, allowing the chia seeds to absorb the liquid and thicken the pudding.

          Once ready, give the pudding a good stir. If it's too thick, stir in a splash of almond milk to reach your desired consistency.
